Courgette Soup with a Twist

I like making soups which have different elements and exciting textures. In the case of this courgette delight, this comes from the hidden spiced courgettes cubes at the bottom and the creamy, melting goat’s cheese cubes at the top!

RECIPE

Type: Vegetarian (to make this soup vegan, either skip the goat’s cheese or replace with any vegan cheese or crunchy croutons)

Approx. Cooking time: 15 mins

Serves: 2

Ingredients

  • 2 courgettes
  • Half of a red onion
  • 2 thick slices of goat’s cheese
  • 500ml water
  • 1 Teaspoon sunflower oil
  • 1 pinch of paprika
  • Salt and pepper, to taste
  • Optional – a slice of bread for serving

Preparation Steps

  1. Chop one and a half courgettes into medium size cubes
  2. Dice the remaining half courgette into small cubes
  3. Chop the onion into medium pieces
  4. Cut the goats cheese slices into small cubes

Cooking Steps

  1. Heat up half a teaspoon of sunflower oil into a medium size pot
  2. When the oil is hot, add the onion to the pan and cook for a minute
  3. Add the courgettes and cook for a couple of minutes, stirring regularly
  4. Add salt and pepper to taste
  5. Cover with 500 mL of water
  6. Half cover the pot with a lid, and cook for 10 mins
  7. Blend the soup until smooth. If you are using a hand blender, you can blend right away when the mixture is hot. If you are using a blender with a lid, leave the mixture to cook down for 5 minutes before blending
  8. Heat half a teaspoon of sunflower oil in a small pan
  9. When the oil is hot, add the small courgette cubes to the pan. Add paprika and salt and stir well. Cook for 3 to 4 minutes, or until the courgette cubes are well cooked and slightly brown on the outside
  10. At the time of serving, place the courgette cubes at the bottom of the plate. Cover them with the soup and top with the goats cheese cubes
  11. Serve hot, maybe with a slice of fresh bread on the side!
